F. Xavier Malcata, full professor in the Department of Chemical Engineering at the Faculty of Engineering of the University of Porto (FEUP), was recently distinguished with the International Dairy Foods Association Teaching Award in Dairy Manufacturing, awarded by the American Dairy Science Association (USA ), the largest technical-scientific association in the world in the dairy sector.
It is the first time that a Portuguese is recognized with this prestigious award, aimed at teachers who stand out for their “extraordinary contributions” to teaching in the dairy sector.
F. Xavier Malcata’s career in the area of food engineering includes playing decisive roles in the interface with the business sector and in academic management. Among the pioneering approaches in food science and technology that he led, the development of nutraceutical ingredients and functional foods (i.e. with an active contribution to health) stands out and the characterization and improvement of traditional Portuguese foods, including the design of microbial starter and tuning cultures for cheese.
